Once again, food truck fans will be able to take their pick of choices during LaFayette Main Street’s Spring Food Truck Festival on March 29.

The festival this month will have live music, a variety of food trucks, and this time, an Easter egg hunt around the LaFayette square. There will also be Easter Bunny photos and over 20 food trucks and vendors.

One of the most recognizable and consistent vendors for the food truck festival is Rollin’ Rackz Barbecue. The local food truck owners have become a staple of the community and will be at the spring event.

Jessie Moultrie and her husband Chad Moultrie, owners of Rollin’ Rackz Barbecue food truck, have been involved in the food truck festivals since the inception of the project last year.

Rollin’ Rackz has been a popular food truck around the county for several years. Moultrie said it was a dream come true for her husband.

“It was a dream of my husband’s and so he’s always been really good at cooking things,” Moultrie said.

Both have full-time jobs on top of their side business but they run the food truck any chance they get. However, it has now become a burgeoning family business as their oldest, Addie, has opened Addie’s Crazy Cones, a snow cone business.

Last year, Addie applied for an entrepreneurship start-up competition hosted by Auburn University School of Business. Competing against dozens of business students and local business owners, Addie won $1,000 in startup funds. She used it to purchase a food truck of her own.

“[Addie] started off coming with us and just setting up a tent beside us, and now she has her own,” Moultrie said. “So it’s become more of a family thing. Of all of us getting there and working.”

The Moultries have loved getting to come out to community events and see the support from the community from the point of view of a vendor.

“It’s fun to see it in LaFayette. It’s neat to see everybody coming out as a community. It’s really neat to watch,” Moultrie said.

One of LaFayette Main Street’s four pillar goals is to help stimulate economic growth in the downtown area of LaFayette. DeAnna Hand, director of LaFayette Main Street, introduced many new events to highlight local businesses in the past year that she has been in the position. Moultrie said she has been involved in much of this growth and has witnessed even more of it.

“LaFayette Main Street has made a huge impact. You can see it in just the things that you see around downtown like the benches and things like that. That is really cool. I feel like they have bent over backward to help the local businesses along,” Moultrie said, “Not just the food trucks, but all the local businesses.”

On March 29, Moultrie suggests customers check out the signature Rollin’ Rackz nachos that are made with their homemade chips or even just a sandwich.
